Chipotle Copy Cat Chicken Burrito Bowl

I was craving Chipotle the other day and I didn't want to drive to go get it so I went to the store and got a few things to try it on my own. This was the first time I have attempted this so if you want to make modifications to it then by all means go for it!


Here is what I used:
Brown Rice
Lime and Cilantro (make their version of cilantro lime rice)
Sweet Corn
Black Beans
Salsa (or tomatoes)
Chicken
Fajita Spice
Guac
 -Avocados
 -Red Onion
 -Tomatoes
 -Salt
 -Lime
 -Cilantro and fresh jalapenos (if you would like)


Guacamole Recipe:
Slice open the avocados, and put into a bowl
Then add half a small lime (i like a lot of lime juice)
Add about 1/2 tsp of salt (can add more at the end)
Mash the avocados to the chunkiness you desire. 
Slice the tomatoes, red onion, jalapenos and cilantro and add into the bowl and fold into the guac.
Taste the guac, add more salt or lime if you desire.

I used brown rice instead. 
I heated up the corn and black beans on the stove top while the rice was cooking. 
To make the chicken I thawed out my chicken, cut into bite size pieces, put a little extra virgin olive oil in the skillet and began to cook my chicken. I followed the rest of the directions on the back of the fajita seasoning.
I added the rice, then corn, black beans, chicken, some salsa and topped it off with guac. I love this Chipotle Copy Cat Recipe and I hope you do it.
